Homemade Creamy Mushroom Soup & Baked Rice Dinner

Made this creamy mushroom soup & baked rice to welcome my dear hubby who was away for the last 3 wks. I have used 3 types of mushroom in this soup, with onions and Nestle Cream.I used the same recipe for baked rice as in Happy Homebaker's blog. Except this time, I put in mixed veg to add some colour to the rice. Somehow, the colour is still not as perfect and I think should have added some chedder cheese. The cheese is hard and crispy, should be a little soft & it should melt into the rice.
Next time will try my small oven instead of my conventional oven to make this.

Wholemeal Bread & Milk Bread

Got my helper to make this today, the wholemeal bread is similar to the one that I have made before, except the component for wheat flour and bread flour is 50-50 each.

This milk bread is made by adding 2 scoop of Pediasure Milk Powder into the usual recipe of using milk instead of water.

Greek Lemon Pound Cake

Dear hubby is returning tmr and I wanted to make him a tiramisu since I have not made for quite something. However, I am not able to find it in the supermarket that I passed by & I am home late, I need to make something quick. After looking through the recipes that I have in my file, decided to make this Lemon Yoghurt Cake.

This is the quickest cake I made so far. I follow this Recipe, however, the low-fat yoghurt (not Greek though) that I bought is in 150ml, hence, I measure all ingredients using the yoghurt cup. All the ingredients are mixed by stirring, no electric mixer needed.

Finally, cut & tried the cake, taste is good, but I find the cake not soft enough. Hubby just took a bite as we were rushing out & too full to eat any more things after the mushroom soup & bake rice.

Brought half the cake to office the next day, it is well received & they like it very much.

Looking for Bakers In SHANGHAI!

Hi,

If you know any bakers in Shanghai, pls let me have their blog add. The reason for this post is to help my aunt who is currently residing in Shanghai to get her baking needs so that I will not have to send or find ingredients for her in Singapore...:)

Thanks in Advance

My dad has requested that I make him another chinese steam carrot cake after he tried mine on my 1st attempt.

I have added more salt as the previous one taste a little blend, I also bought the healthier chinese sausage (liap cheong).

New gadgets from BIY

I had some time before my appointment & I was near BIY, so popped by to see if I could get the Icing fondant. However, it was out of stock. So went around the shop to see if I can find something interesting. Here's what I got!

Milk Bread

My helper made this, I have asked her to put the whole dough into 1 loaf tin, but she split them into 2, hence, could not get the square bread that I wanted!

Another Chocolate Torte

This is the 1st Chocolate Torte that I made today, it's like the 2 previous bake. Something is amiss! It does not look at all like the one Happy Homebaker has made.

I want to give this to my client's staff as a farewell cake, so have it decorated with some chocolate frosting for the base & some fresh cream with kiwi. Hope the cake is well received.

I did it!

I finally got the Chocolate Torte rite this time! I was so delighted when it was just out from the oven.

However, when I try to turn it out, it cracks (maybe the pan is not greased enuf)! I was dishearten. Intended to bring this to office to share with collegues, but look at the cracks, it's impossible. But, I think I will still go ahead to bring this out!

I took a slice to try! It tasted wonderful!

Twin Egg

I had Nasi Brani the other day & to my surprise, there are 2 yolks in 1 egg. This is super rare, so use my handphone to pix it!

Mushroom Bread!

My girl wanted the bread in muffin shaped.. So, ask my helper to make the bread according to the recipe I previously made. She did a better job than me, so her bread rise much better and overflow the muffin pan, thus, resulting the shape of mushroom instead of muffin.

The texture is very soft & springy.. however, something is amiss. It does not taste as sweet as mine!

The Devil Cake

Finally cut the cake today to share with the girls.. here's pix of the inside.. it tastes a little sour due to the sour cream used. Cake is not very sweet but when eat with the sweet chocolate frosting, it taste heavenly.

A Farewell Cake!

Made this to share with my client's staff, since it will be my last time to their office tmr.
As I wanted to finish up the chocolate frosting that I have, I decided to make it a 'Devil' cake since it's near Halloween.
While doing the Chocolate Frosting, I decided to take few shots to show the texture! Looks not too clear though.
All ready to give the cake a dressing!

This is half done!

This is ready to be set in the fridge!

For the cake, I used the same Chocolate Layer cake that I have made previously, but modify it to a 8" pan instead.

My girl likes the bread!

I let my girl eats the only muffin bread left, she finally says nice & is willing to eat this for breakfast tmr...

Quick GreenTea Muffins

I have promised a girl in my client's office that I will make some muffins on my last day at their office. However, I have cleaned forget about it until I woke up this morning. Hence, I made this in rush of less than 1hour (including baking time).

The recipe is supposed to yield 12 mufifns, however, I want more fully filled muffins, so, I spooned the mixture into only 10 muffin cups.

These muffins called for more greentea powder and hence the taste of greentea is much stronger than the previous batch. I have obmitted the chocolate this time as dear hubby commented that the chocolate chips will cover the taste of greentea.

Here's the recipe:

Ingredients (I used 10mins to gather these)

  • 2 cups AP flour
  • 3/4 cup white sugar (original recipe called for 1 cup)
  • 1/2 tsp baking soda
  • 2tsp greentea powder (I used 'Red Man' bakable greentea)
  • 1/2 cup milk (I used slim milk)
  • 1 stick butter (wonder how much is 1 stick, so used 100gm that is called for in another muffin recipe)
  • 2 eggs (not stated size, so used 1 big, 1 medium)

Method:
1. Sift together flour, soda, greentea and set aside.
2. In a large bowl, beat the butter until light, add the sugar and beat until light and fluffy.
3. Fold in dry ingredients in 3 portions alternating with milk until just incorporated (do not overmixed) - I used 10mins to do this.
4. Spoon bater into lined muffin try and bake at 175degC for 25 to 30mins.

Wholemeal Bread or Muffin??

Since not going out, might as well make some bread to my likings.. not sure my girl will eat since she don't fancy wholemeal stuff.. However, I believe the boy will gobble everything! As expected, when the bread is done, I asked the girl if she wants to try, she rejected, saying she wants white bread! :( No choice, will have to ask helper to make it tmr following how I did today.

The muffin mould the dough made the crust very stiff, however, when I tore it, it's soft & springy. Taste wise, I like it very much!

Ingredients cater for 1 loaf tin:

  • 200gm bread flour
  • 50gm whole wheat flour
  • 40gm butter
  • 1/2 tsp salt
  • 1/2 cup water
  • 40gm brown sugar
  • 1 egg
  • 1 tsp instant dry yeast

How I do it:

1. Mix water, sugar, egg, dry yeast in a large bowl. Beat at low speed until well blended. Add the flour, change to medium speed until well the dough is smooth. Cut in the butter at low speen until well mixed. Again change to medium speed and mix until the dough can be stretched into a thin sheet.

2. Remove from mixer and place in a greased bowl, cover with damp cloth and let rise for 90mins.

3. Divide and knead dough into shape as desired. and let rest on the working table for 10mins. Shaped again and place dough on a greased baking sheet to rest for 15 to 20mins.

4. With a rolling pin, roll each dough into square piece( I skipped this step). Then use hand to mould the dough and place them into the baking tin, cover with damp cloth and let it rise till abt 90% of the tin.

5. Score the top with flour knife (I tried this, however, the cut is not deep enough to have the cut impression) and place them in the oven (preheat to 170deg c) and bake for 25 to 30mins (or golden brown).

Baked Rice finally!

Finally made this Baked rice since bought some Mozzerala Cheese from the supermarket this morning.

However, I have 2 versions as my girl would not want any cheese in her rice. She is those who prefer to eat things on it's own, no doubt has already watched the movie 'Ratatouille' that food tasted much better if they are combined. I find that it is too boring with only chicken and button, so I added some sausages on top of the rice to add colours.

I like vegetables, hence u see here, I have some brocolli to go with the rice.

I think I have overbaked it with higher temperature, 'cos it tooks more than 40mins for the cheese to turn brown, so I turn the temp up to 250degC. The crust is too hard to bite.. However, I still enjoy this 1st bake rice of mine!

Cookie Monster again!

Made the same butter cookies again, but this time round, I used Custard Powder and have them baked a little while longer till they turn golden brown.

They are indeed much tastier that the previous 2 batches.

Oreo Butter Cake

Finally get to try this recipe after seeing the post from Happy Hombaking I have reduced the sugar by another 30gm and replacing it by brown sugar instead of the normal caster sugar. Hence, my version is not sweet at all.

Made this to welcome back my dear hubby from overseas after 3 wks! I took me only 30mins to put the tray into the oven before I go off to fetch the man!

2tsp bakable green tea powder

2. Shift flour and baking powder, mix into the butter mixture in 3 parts alternating with milk and vanilla essence using the electric mixer at low speed.

Nutella Bread

After seen Happy Homebaker make her Crunchy Peanut Butter Bread fully with her breadmaker, I am so anxious to try my breadmachine tmr.

However, my helper said, it will take only 3hrs, so, she suggest we do it now. Hence, we fill the bread machine with the ingredients for the bread following her recipe except replace the peanut butter with nutella. Keep my fingers crossed for the next 3 hrs.

Aiyah, something wrong whit the bread machine..after 30mins, the blade didn't move a single bit when it says Knead! Just took out my Kenwood Large Mixer to knead the ingredients. Will wait for 1 hr to see if it rise (it's 10pm!).

It's almost 11pm, the dough has risen, but think not enough, will let it rise for another 30mins. Then, ask my helper to throw the dough for me!

It's 1am and I'll have to wait till the dough rise to about 90% of the pan before I can send them to the oven!

Time: 1.40am, checked dough, it's 80% filled. will wait 10mins to check again!
Time: 1.50am, can finally put the pan into the oven to bake for 20mins.

So tired & sleepy......

It's 2.30am, finally, the bread is ready.. will post the pix tmr. Hope my kids will like the bread when they wake up! :)

Presenting my bread after the long wait........................

Woke up with puffy eyes to cut the bread, I'm so happy with the result, it's soft and I like taste of nutella. My girl has it plain (she usually wants nutella spread on her white bread)

My loss of beauty sleep is all worthwhile!
