Cookie Monster request!


Green Tea Muffin with Red Beans

Merry Christmas & a Happy New Year to come
It has been a long time since I bake! Partially due to laziness during preggy! However, since dd requested me to make some cookies (later post) I decided to let my oven work a little more with this Green Tea Muffins with Red Beans (1st attempt)
Didn't know that the content is so moist, however, the output is fine as the heat as absorped the moisture during baking. I had placed some Red Beans in the muffin as fillings & I also add the balance Red Beans on top to have a little decoration to the muffins.

Happy Birthday, Ryan!

Ryan is my nephew and his birthday celebration will have to carry forward to this sunday as some of my sis are going on holiday during his birthday. Hence, the mommy has requested a Racing Car cake for him as he is a big fan of CARS, just like my son!! I think boys are usually fancinated by all types of transportations relating with wheels!!

I think I have forgotten the logo!! Oh gosh!! The name is spelled wrongly, only notice after I brought the cake out!

Japanese Green Tea Cheesecake!


It's a long time since I bake Japanese Cheesecake! Since I have a whole block of cream cheese in my fridge, I must put them into good use.. so, you can expect a lot of cheesy stuff till I finish the cream cheese.

Not bad.. at least this looks 'Green' unlike the Green Tea Muffin I made recently.

For this cake, I have used the same recipe plus 2 teaspoon of green tea powder to the corn flour.

This is simply yummy!

WholeMeal Bread with a change!

A week has passed and I have finished my loaf of wholemeal bread. Saw my helper preparing to make another loaf for this week, I wanted something for a change.. hence, asked her to split the dough into 6 portion to make them into buns instead.

Long time no see: Green Tea Muffin!!

Just browse through previous batches of Green Tea Muffin I have made.. Somehow, this batch seems to be more brown than Green! Probably 'cos I have used a different Green Tea Powder compare to previous ones. Anyway, taste as good! Hope they will be well received tmr in my office!

Hello Kitty Birthday Cake

I have a request to make Hello Kitty Birthday Cake 2 wks ago from a 5 yr old girl. This is what I have come out with.

I had a hard time baking the cake as the silicon mold is very deep and I have no idea if I should reduce or increase the temperature, recipe state 175degree and 20 mins for 8" (I have converted to 7")

This result in the imperfect in this cake.

Strawberry Chiffon Cake

Another Birthday cake for my mom? Yeah.. the previous was made last saturday, and was eaten without her cutting as we wanted to give mom a surprise celebration on today (which is the Actual day)

All goes according to plan as mom was kept in the dark until the caterior set up the food at her place.
How can such celebration goes without a proper cake?

Hence, I have made this cake last night.. without the top design as my highest container can only carry up to this height (abt 7")



Here's the design made in hurry as I was 1 hours late (I travelled from Suntec to Jurong, by bus)! I had asked my hubby to fetch the kids and the cake from home, together with my pre-prepared ingredients and tools.


This is the most successful cake I have made so far!

Here's how I made the cake:

Ingredients:

  1. 180gm cake flour
  2. 1.2tsp vanilla extract
  3. 50gm raw sugar
  4. 1.2tsp baking powder
  5. 1/8 tsp salt
  6. 7 egg yolks
  7. 108gm strawberry low fat fresh milk
  8. 84gm vegetable oil
  9. 7 egg white
  10. 50gm raw sugar
  11. 1/8 tsp cream of tartar

Fillings:

  1. Whipping cream
  2. Srawberries

Method:

  • Prepare oven to 1750C, Greas and flour 2 X 9" round pan.
  • Sift cake flour, baking powder and salt, set aside
  • beat egg yolks until ribbon stage, add sugar and continue to beat till sugar dissolves.
  • Add vanilla extract, oil, milk and beat till combine, add flour in 2 portion and beat in medium speed till incorporated.
  • In a clean bowl, beat egg white, tartar and sugar until soft peaks form.
  • Fold in egg white into the yolk mixture in 3 portion.
  • Pour the mixture into the prepared pan and bake for 20mins.
  • Remove and leave to cool.
  • Frost with whipped cream.

HomeMade Pancake

Woke up early to prepare this pancake for my kids.

We like to have them with Hershey's Chocolate Syrup with some margerine.

Ingredients:

  1. plain flour
  2. baking soda
  3. salt
  4. 2 eggs

For frying:

  1. Butter

Method:

  • Beat all ingredients together until smooth
  • Fry with butter using non stick frying pan

Happy Birthday to Mom!

Mom's birthday falls on 22nd and I will not be seeing her, hance, made this well in advance for her.

She is not a chocolate lover, so, I used Vanilla Angel Cake to create this cake for her. I really would like to leave the cake plain, but, how can birthday cake be birthday cake with no decoration?

Oatmeal Chocolate Chips Cookies
























Got this recipe from a book I borrowed from the library.

Ingredients:
1 cup all-purpose flour
1tsp baking powder
175gm unsalted butter
100gm brown sugar
1 large egg, at room temperature
2tsp vanilla extract
250gm rolled oats (I use quick oatmeal)
75gm semisweet chocolate chip

Method:
1. Preheat the oven to 190degree. Lightly grease two baking sheets.
2. In a large bowl, stir together gthe flour and baking powder.
3. In a large mixing bowl and using a handheldelectric mixer, cream the butter and sugars together until ligh and fluffy. Add the egg and whisk until combined. Stir in the vanilla. With the mixer on low speed or use a wooden spoon, gradually add the flour mixture until combined. Stir in the oats and the chocolate chips.
4. Drop rounded tablespoonfuls o fthe dough, well space apart onto the baking sheets.Leave space between each one for spreading. Flatten each cookie slightly with the back of the spoon. Bake until golden for 12 to 15 mins.
