Pressent for Ning

Today is Hui Ning's birthday & once again, I wanted to make her birthday cake a special one. So I let her choose the design! After showing her some simple butter cream design, nothing satisfy her until she saw fondant pressent desing! I dragged making fondant cake as I always have difficulty making a smooth surface on the whole cake! However, since... it's her birthday, I have to oblige & it took me the full 4 hrs just to make a simple fondant design cake! I pre-bake the cake last night, so today will focus on designing the cake.

Cheese Brownie vs Brownie - who will win?












Someone requested for the recipe of the Cheese Brownie which is orignated from here with a little of my modification!
Ingredients
Brownie
160gm unsalted butter
130gm semi-sweet chocolate blocks
3 large eggs
1/4 tsp salt
2/3 cup castor raw sugar
1/2 tsp vanilla extract
2/3 cup all purpose flour
2/3 cup walnuts pecans, chopped (optional)
Cream Cheese Fillings
250gm cream cheese
45gm butter
60gm icing sugar
1 large egg
Method:
1. Preheat oven to 170 degree celcus
2. Grease a 9" square pan (I use silicone square pan - no need to grease)
3. In a double boiler, melt butter and chocolate. Remove from heat to cool for 5 mins.
4. Use and electric mixer, beat eggs and salt until lemon coloured and foamy.
5. Add Sugar and continue beating until mixture is well blend.
6. Stir in vanilla.
7. Add cooled chocolate to mixture and beat till blend.
8. Fold in flour, careful, do not over mix.
9. Gently fold nuts into the batter.
Fillings:
10. Beat cream cheese and butter till smooth.
11. Add icing sugar and continue beating till combine.
12. Add egg.
13. Pour half of the Brownie batter into the prepare pan. Follow by the cream cheese fillings. The pour the balance brownie batter into the pan.
14. Bake for 40mins
15. Remove from oven and leave to cool in baking pan.

Baking wif Kids!

My sis would like to learn how to make cup cakes & decorate them with icing, so that she can make this again with her children in their spare time!
Since I have so many mangoes in the fridge, I have decided to make this Mango cupcake using the basic cup cake recipe from http://cookingismypassion.blogspot.com/ by adding mango essence instead of vanilla essence and some cut mango cubes in addition to my usual Chocolate Chips Muffins!






The girls simply had a wonderful time playing with buttercream icing & adding some icing decoration on the chocolate muffins!


See! She is so serious to make them perfect!


While this girl can't wait to taste her own creations!

Happy Birthday, Ryan!

Ryan is my nephew and his birthday celebration will have to carry forward to this sunday as some of my sis are going on holiday during his birthday. Hence, the mommy has requested a Racing Car cake for him as he is a big fan of CARS, just like my son!! I think boys are usually fancinated by all types of transportations relating with wheels!!


Here's what I got for him:
I think I have forgotten the logo!! Oh gosh!! The name is spelled wrongly, only notice after I brought the cake out!

Hello Kitty Birthday Cake

I have a request to make Hello Kitty Birthday Cake 2 wks ago from a 5 yr old girl. This is what I have come out with.

I had a hard time baking the cake as the silicon mold is very deep and I have no idea if I should reduce or increase the temperature, recipe state 175degree and 20 mins for 8" (I have converted to 7")

This result in the imperfect in this cake.

Race Car Cake (Lightning Mcqueen Reprica)

It's my boy's birthday and he is a big fan of CARs, Trains, Bus, anything to do with wheels.
Hence, search the internet for designs of Cars, managed to find Lightning Mcqueen, including the piping of the design.

Here I go, head to Phoon Huat on monday, so disappointed that the car pan is sold out, however, managed to reserve one and transferred it to the branch near my vanity.

It was Wednesday, went to get the pan. I was so disappointed again! The race car pan is Not Lightning Mcqueen. But...

Nevertheless, bake this cake this morning with the car pan. I had only filled the pan upto half full, and had the balance bake in the Bunt pan.

I thought, this is too thin for slicing into 2 layer. And somehow feel that the cake will not taste nice.
This is the balance batter that I put them in the bunt pan.
Disarster!.. The cake is not to my expetation!
So, I quickly search my recipe for another easy to make recipe: Tradition Sponge Chocolate Cake. This is perfect except for some flour that is trapped and not fully mixed!
Since the cake is done, I make the buttercream icing while waiting for it to cool down. Here's my tools!


It was difficult to get the correct red for the original Mcqueen and here is mine!


Happy 3rd Birthday to my boy, hope his classmate will like the cake tomorrow when I bring it to his school!
