Oatmeal Chocolate Chips Cookies
























Got this recipe from a book I borrowed from the library.

Ingredients:
1 cup all-purpose flour
1tsp baking powder
175gm unsalted butter
100gm brown sugar
1 large egg, at room temperature
2tsp vanilla extract
250gm rolled oats (I use quick oatmeal)
75gm semisweet chocolate chip

Method:
1. Preheat the oven to 190degree. Lightly grease two baking sheets.
2. In a large bowl, stir together gthe flour and baking powder.
3. In a large mixing bowl and using a handheldelectric mixer, cream the butter and sugars together until ligh and fluffy. Add the egg and whisk until combined. Stir in the vanilla. With the mixer on low speed or use a wooden spoon, gradually add the flour mixture until combined. Stir in the oats and the chocolate chips.
4. Drop rounded tablespoonfuls o fthe dough, well space apart onto the baking sheets.Leave space between each one for spreading. Flatten each cookie slightly with the back of the spoon. Bake until golden for 12 to 15 mins.

Chocolate Butter Cookies

Does this remind you of the chips in a Casino?
Since it's the childcare centre closure day tomorrow, I think it's better to have some healthy snacks for them at home!
This is the same Butter Cookie recipe that I always use with addition of 1/4 cup of cocoa powder.

Cookie Monster again!


Made the same butter cookies again, but this time round, I used Custard Powder and have them baked a little while longer till they turn golden brown.

They are indeed much tastier that the previous 2 batches.

Butter cookies & Baked Donut

I baked this on Wed evening for my nephew's party.

Finally put my mini donut pan into use, this is in addition to the cupcakes and cookies for my nephew. This is a very quick and easy recipe that I have adopted, however, the quantity called for is good for 24 mini donut and I have only 12pc pan. Hence, I will have to bake them in 2 batches.


For the toppings, I melt some left over bitter-sweet chocolate, adding in some freshmilk to thicken them. When done with this, I realised that the chocolate toppings will not stick to the donut when dipped (Was it due to the fact that I did not dip immediately into the chocolate frosting when the donut is still warm?). So, I put them into a piping bag and piped them on top of the donut. My girl helped to decorate them using mini M&Ms and colour beads.

Butter Cookies


Made cookies for my kid's snack again! This time using recipe from My Culinary Journal. However, after refrigerating the dough, I still could not mould it the way I did for the Disney cookies. Hence, I used a cookie press to press out the dough to make different shapes. The cookie press is far way too easy & quick to use, within 10mins I finish pressing all the dough and they are ready to be baked.

Butter Cookies


I am so sick of making chocolate cookies using the same recipe I made earlier, so, I did not add the cocoa powder and has it replaced with AP flour. Surprisingly, the taste is fantastic, however, I still find it a little sweet even though I have reduced the sugar and used brown sugar instead. Again, I have my girl to help me mold the cookies & we use the balance to make little stars and birds (my new cookies cutter addition)!
Here's the recipe:
175g Powdered sugar
135g Butter
1/4 tsp Salt
1 egg
[200g cake flour
A-[30g plain flour (in replace for cocoa powder)
[1/2 tsp baking powder
1. Preheat Oven to 170deg C. Grease a baking sheet. Mix and shift A.
2. Soften the butter at room tempertature. Cream butter and sugar in an electric mixer until fluffy and pale. Add the egg and mix well. Fold in A and salt then mix into a smooth dough. Divide the dough into 40 small balls and place them on a greased baking sheet. I used hand to flatten the ball and use cookie cutter to press them into shapes and decorate as desire.
3. Bake for 10minutes.

Horlick Doggie Cookies


My girl has again requested for cookies, hence, made this Horlick Doggie cookies. I have used Milo instead of Horlick for the last time, now, since there is horlick in the cabinet, I thought to give this a try to see the contrast in colour, I have replaced the eyes using icing stars. Looks better I think! I'm going to bring to give to my nephew as he is celebrating his 2 yo birthday today (so happened to be my birthday too!)
My sis even strike 4D using his birthday & mine birthday on Wed!

Chocolate Cookies

Bought this cookie cutter for quite some time, finally put them into use. I had hard time molding the cookies as the recipe I have used is quite soft. So, we actually mold the dough on the baking tray itself and take out excess dough using a stick, hence, you can see that there are so much mess in between the cookies.

Here's the recipe:

175g Powdered sugar
