Wholemeal Bread & Milk Bread
Greek Lemon Pound Cake
This is the quickest cake I made so far. I follow this Recipe, however, the low-fat yoghurt (not Greek though) that I bought is in 150ml, hence, I measure all ingredients using the yoghurt cup. All the ingredients are mixed by stirring, no electric mixer needed.
Finally, cut & tried the cake, taste is good, but I find the cake not soft enough. Hubby just took a bite as we were rushing out & too full to eat any more things after the mushroom soup & bake rice.
Brought half the cake to office the next day, it is well received & they like it very much.
Looking for Bakers In SHANGHAI!
If you know any bakers in Shanghai, pls let me have their blog add. The reason for this post is to help my aunt who is currently residing in Shanghai to get her baking needs so that I will not have to send or find ingredients for her in Singapore...:)

Another Chocolate Torte
I did it!
However, when I try to turn it out, it cracks (maybe the pan is not greased enuf)! I was dishearten. Intended to bring this to office to share with collegues, but look at the cracks, it's impossible. But, I think I will still go ahead to bring this out!
I took a slice to try! It tasted wonderful!

A Farewell Cake!

My girl likes the bread!
Quick GreenTea Muffins
The recipe is supposed to yield 12 mufifns, however, I want more fully filled muffins, so, I spooned the mixture into only 10 muffin cups.
These muffins called for more greentea powder and hence the taste of greentea is much stronger than the previous batch. I have obmitted the chocolate this time as dear hubby commented that the chocolate chips will cover the taste of greentea.
Here's the recipe:
Ingredients (I used 10mins to gather these)
- 2 cups AP flour
- 3/4 cup white sugar (original recipe called for 1 cup)
- 1/2 tsp baking soda
- 2tsp greentea powder (I used 'Red Man' bakable greentea)
- 1/2 cup milk (I used slim milk)
- 1 stick butter (wonder how much is 1 stick, so used 100gm that is called for in another muffin recipe)
- 2 eggs (not stated size, so used 1 big, 1 medium)
Method:
1. Sift together flour, soda, greentea and set aside.
2. In a large bowl, beat the butter until light, add the sugar and beat until light and fluffy.
3. Fold in dry ingredients in 3 portions alternating with milk until just incorporated (do not overmixed) - I used 10mins to do this.
4. Spoon bater into lined muffin try and bake at 175degC for 25 to 30mins.

Wholemeal Bread or Muffin??
The muffin mould the dough made the crust very stiff, however, when I tore it, it's soft & springy. Taste wise, I like it very much!
Ingredients cater for 1 loaf tin:
- 200gm bread flour
- 50gm whole wheat flour
- 40gm butter
- 1/2 tsp salt
- 1/2 cup water
- 40gm brown sugar
- 1 egg
- 1 tsp instant dry yeast
How I do it:
1. Mix water, sugar, egg, dry yeast in a large bowl. Beat at low speed until well blended. Add the flour, change to medium speed until well the dough is smooth. Cut in the butter at low speen until well mixed. Again change to medium speed and mix until the dough can be stretched into a thin sheet.
2. Remove from mixer and place in a greased bowl, cover with damp cloth and let rise for 90mins.
3. Divide and knead dough into shape as desired. and let rest on the working table for 10mins. Shaped again and place dough on a greased baking sheet to rest for 15 to 20mins.
4. With a rolling pin, roll each dough into square piece( I skipped this step). Then use hand to mould the dough and place them into the baking tin, cover with damp cloth and let it rise till abt 90% of the tin.
5. Score the top with flour knife (I tried this, however, the cut is not deep enough to have the cut impression) and place them in the oven (preheat to 170deg c) and bake for 25 to 30mins (or golden brown).
Baked Rice finally!
However, I have 2 versions as my girl would not want any cheese in her rice. She is those who prefer to eat things on it's own, no doubt has already watched the movie 'Ratatouille' that food tasted much better if they are combined. I find that it is too boring with only chicken and button, so I added some sausages on top of the rice to add colours.
I like vegetables, hence u see here, I have some brocolli to go with the rice.
I think I have overbaked it with higher temperature, 'cos it tooks more than 40mins for the cheese to turn brown, so I turn the temp up to 250degC. The crust is too hard to bite.. However, I still enjoy this 1st bake rice of mine!

Green Tea Vs Chocolate Chocolate chips Muffin
However, after I got home to cut the muffin, I noticed that they are undercooked, hence, pop them into the oven for another 5mins.
Ingredients (makes 12 muffin):
113gm unsalted butter
200gm cake flour
2tsp baking powder
2tsp bakable green tea powder
3tsp cocoa powder
1/2 cup milk
2 eggs
1/2 tsp vanilla essence
How I do it:
1. Cream butter using electric mixer at medium speed until smooth, add sugar gradually till fluffy, add eggs, one at a time till well mix
2. Shift flour and baking powder, mix into the butter mixture in 3 parts alternating with milk and vanilla essence using the electric mixer at low speed.
3. Split the batter into 2 bowls. Add greentea powder into one bowl and cocoa powder into the other, follow by chocolate chips.
4. Spoon the batter into the muffin tray laid with muffin cup and bake at 180degC for 25mins.

Nutella Bread
However, my helper said, it will take only 3hrs, so, she suggest we do it now. Hence, we fill the bread machine with the ingredients for the bread following her recipe except replace the peanut butter with nutella. Keep my fingers crossed for the next 3 hrs.
Aiyah, something wrong whit the bread machine..after 30mins, the blade didn't move a single bit when it says Knead! Just took out my Kenwood Large Mixer to knead the ingredients. Will wait for 1 hr to see if it rise (it's 10pm!).
It's almost 11pm, the dough has risen, but think not enough, will let it rise for another 30mins. Then, ask my helper to throw the dough for me!
It's 1am and I'll have to wait till the dough rise to about 90% of the pan before I can send them to the oven!
Time: 1.40am, checked dough, it's 80% filled. will wait 10mins to check again!
Time: 1.50am, can finally put the pan into the oven to bake for 20mins.
So tired & sleepy......
It's 2.30am, finally, the bread is ready.. will post the pix tmr. Hope my kids will like the bread when they wake up! :)

Woke up with puffy eyes to cut the bread, I'm so happy with the result, it's soft and I like taste of nutella. My girl has it plain (she usually wants nutella spread on her white bread)
My loss of beauty sleep is all worthwhile!
