1st Egg Tart!

I had wanted to make Strawberry Pie, but instead it turn out to be egg tarts 'cos I do not have the main ingredients: strawberries! This tarts was made using Aunty Yochana's Recipe.

The recipe says use Food Processor to mix all ingredients, I follow through until I was about to roll the dough, then I notice that it is not rollable to form a smooth dough. So I use a Elect Mixer to mx the dough again and chill it. After 20mins, I roll the dough & hand press it into the Muffin Tray (the only tools I have with similar shape). Then I used a fork to press the rim to remove excess dough. This is my tart dough.

After 20mins of baking, this is what I got!

I did a cross section, thinking that the dough is not fully cooked, however, MIL says it's cooked, hence, I did not put them back into the oven. Taste is YUMMY, trustworthy recipe from Aunty Yochana!

Steam Huat Kuah

I have made this using PH's Huat Kueh ready mix, just need to add water or coconut milk, my choice for Fresh Milk (more healthy). After all the dry and wet ingredients incorporated, I saperate them into 4 small bowls and drip some food colourings to form the colours I wanted! Put in the steamer for 20mins & they are done!

Easy Eggless Lemon Cupcakes

It has been quit a success making Easy Chocolate Muffin using this recipe, hence, for a change, I do away with the Cocoa powder and replace it with Lemon Essence, and this is what I got! These cakes are actually made for my vegetarian colleagues!

Easy Lemon Cupcakes (modification from recipe contributed by Puspha in Nurkochen forum)
Ingredients:
  • 1½ +1/4cups top flour
  • ¾ cup granulated brown sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup butter or margarine, melted
  • 1 cup milk (run out of fresh milk, used 3scoop son's milk powder with 1 cup water)
  • 1 tbsp vinegar
  • 1 tsp lemon essence (can in crease to 1tbsp)
  • A little cranberries, for topping
Method:
  1. Sift together flour, sugar, soda and salt.
  2. Make a well in the centre. Pour the melted butter, milk, lemon essence (any essence/extract will do) and vinegar into the well.
  3. Stir until all ingredients are moist.
  4. Spoon the batter into muffin cups.
  5. Sprinkle the chocolate chips on top.
  6. Bake in a preheated oven at 180° C for 20 minutes.

Chocolate Cheesecake

It has been a while since I last made this tasty Chocolate Cheesecake! Since, I am on some medication, I had avoided using any liqour this time.

I had always used water-bathe when making this NY cheesecake, hence, for a change, I use normal bake, and this is how the cake has turn out!

I thought it's nice, until few hour later, the cake actually crack!

Hence, I made this to cover the crack, which actually turn out quite tasty with the cake itself.
This is how the chocolate turn out after 10mins in the fridge!
Overall, this cake is tasty, not too sweet, to my liking!

Last of all, I would deligate this Cake to my colleague who has been working till wee hour on Sunday!

Baby Shower Cupcakes

It will be such a waste if I were to throw away the fondant that I had made yesturday. Hence, decided to bake some chocolate and lemon cupcakes and just decorate them with the fondant and give them out to my cousin who has his baby shower today!
I really like the taste of cream cheese frosting and here is some with this type of frosting and the fondant. How do they look?

However, the cupcakes are popular at the baby shower.. they were gone pretty soon and very well received. So glad to have good comments on them.
I will soon have to buy some cupcakes tree to desplay them at parties.

1st Battle with Fondant!
