Bailey's Tiramisu (no egg)



This cake is for my kid's Teachers in their childcare centre.

This Bailey's Tiramisu is made with rich Bailey's Irish Cream and some Coffee liqour. I have modify the original recipe as follows:

Ingredients

  • 2tsp INSTANT ESPRESSO COFFEE POWDER
  • 1 cup HOT WATER
  • BAILEY'S IRISH CREAM, 2/3 cup
  • MASCARPONE CHEESE, 500gm
  • FAT-FREE CREAM CHEESE, 8 ounces, softened
  • BROWN SUGAR, 1/3 cup, packed
  • LADYFINGERS, 24
  • UNSWEETENED COCOA POWDER, 2 teaspoons

Directions

  1. Make coffee by dissolving the coffee powder in the hot water.
  2. Transfer coffee to a shallow dish.
  3. Add 2 tablespoons Baileys' Irish Cream.
  4. Set aside and allow to cool.
  5. In a large bowl, combine Mascarpone and cream cheese.
  6. Beat at high speed until smooth.
  7. Add brown and granulated sugar and remaining Baileys' Irish Cream.
  8. Beat until well-blended.
  9. Have a 9-inch square baking dish ready.
  10. Briefly dip sugar side of ladyfinger in coffee mixture, abt 3secs.
  11. Place (flat side down) ladyfinger on bottom of baking dish (you should use half of the ladyfingers).
  12. Spread half of cream cheese mixture over ladyfingers.
  13. Sprinkle with half of the cocoa powder.
  14. Repeat with remaining ladyfinger (dip the flat side with the coffee mixture), cream cheese mixture, and cocoa powder.
  15. Chill 2 hours.

Brownie with frosting




This is my 1st attempt for Brownie. I use the recipe from 'A Treasury of CookBook, Classics' by Creative Publising. Anyhow, I replaced the sugar with fruit sugar, but the frosting is a bit too sweet using the icing sugar as stated.

Brownie
Ingredients
2.5 cups (625ml) Butter (can try to add only 1 block of butter, I used 1.5 blocks)
4oz (115g) semi-sweet chocolate chips
4 medium eggs, room temperature
1/4 tsp (1ml) salt
2 cups (500ml) sugar (I replace this with Fruit sugar to 3/4 cup)
1 tsp (5ml) vanilla extract
1 cup (250ml) all purpose flour
1 cup (250ml) walnuts pecans, chopped

Method
1. Preheat oven to 175 degree celcus
2. Grease a 13 X 9 inch baking pan
3. In a double boiler, melt butter and chocolate. Remove from heat.
4. Cool chocolate for 5 minutes
5. Using an electric mixer, beat eggs and salt in a large bowl until lemon colored and foamy.
6. Add sugar and continue beating until mixture is well blended.
7. Stir in vanilla.
8. Add cooled chocolate to mixture.
9. Fold in flour. Do not over mix.
10. Gently fold nuts into batter.
11. Pour batter into prepared pan.
12. Bake for 20 to 25mins until a wooden stick inserted into the center comes out clean.
13. Cool in baking pan.


Chocolate Frosting
Ingredients
4oz (115g) semisweet chocolate
3tbsp (45ml) butter (I used margerine instead of butter)
2.25 cups (675ml) icing sugar, shifted (I reduced the sugar as usual)
1tsp (5ml) vanilla extracts
6tbsp (90ml) light cream (I used whipping cream instead of light cream)

Method
1. In a double boiler, melt chocolate and butter.
2. In a medium bowl, mix icing sugar, vanilla and cream with an electric mixer until combined.
3. Add to chocolate in double boiler. Cook for 5 minutes, If mixture becomes too thick, add a little more cream.
4. Remove from heat.
5. Spread frosting on cooled brownies

Chocolate Cookies

Bought this cookie cutter for quite some time, finally put them into use. I had hard time molding the cookies as the recipe I have used is quite soft. So, we actually mold the dough on the baking tray itself and take out excess dough using a stick, hence, you can see that there are so much mess in between the cookies.

Here's the recipe:

175g Powdered sugar
135g Butter
1/4 tsp Salt
1 egg
[200g cake flour
A-[30g cocoa powder
[1/2 tsp baking powder

1. Preheat Oven to 170deg C. Grease a baking sheet. Mix and shift A.
2. Soften the butter at room tempertature. Cream butter and sugar in an electric mixer until fluffy and pale. Add the egg and mix well. Fold in A and salt then mix into a smooth dough. Divide the dough into 40 small balls and place them on a greased baking sheet. I used hand to flatten the ball and use cookie cutter to press them into shapes and decorate as desire.
3. Bake for 10minutes.

Black/White Cheesecake


I have special request to make non-chocolate cheesecake, but there is one colleague who likes chocolate, so, here it is.. Black & Whitc cheesecake. I have leave out the Whipped Cream & sour cream, hence, the taste is very cheesy. Recipe is adopted from Kraft website.

Chocolate Tiramisu (without Alcohol)


My girl has been requesting for a Tiramisu for her birthday this year, however, the one she likes is the original Tiramisu with alcohol, hence, not suitable for School party. After much consideration, I made this Chocolate Tirmisu without Alcohol for her.

She was so delighted when she sees it and her friends finishes the whole cake within minutes and asked for 2nd helpings. I think this is the 1st Tiramisu cake that her friends have eaten and they even request that I make for them during their birthday.
