Bought another mold & did today's batches.. quite like the outcome.. however, the recipe I used today was a little different, taste more like Butter Cookies! It is harder, saltier (used half salted butter), overall .. not too bad except for the 2nd tray that I baked it too long that they were burnt!

This time, I have my elder girl to make this with me & it was fun!

I should have done a proper egg brush so that it will be evenly brown on the surface!

Oreo CheeseCake (2 tray)

I have wanted to make this Oreo Cheesecake to bring to a small gathering. However, hubby wants to try, hence, reluntantly made 2 tray instead of 1 ('cos baking time for these type of cheesecakes is near to 1.5hr each)

This tray uses normal baking!

While this uses my usual 'water bake'

This is the outlook of the non water bake, a little brownish on the side! The texture is dryer as compare to the other tray!
This is the one with water bake, rim is clean. Taste wise, this is more moist!
Yield 1 - 9 inch Springform Pan

Ingredients
1 to 2 cups Oreo cookie (include the cream) + Digestive Biscuits
1/4 cup butter (melted)

3 (8 ounce) packages cream cheese, softened
1 cup white sugar
3 tablespoons all-purpose flour (can add 2 more)
3 eggs

1 teaspoon vanilla essence
1/2 cup sour cream (shd use 1 cup)

Directions
1. Preheat oven to 175 degrees C. In a large bowl, mix together the cookie crumbs to melted butter and stir until well mixed. Pat into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes; set aside.

2.Increase oven temperature to 450 degrees F (230 degrees C).

3. In a large bowl, combine cream cheese, white sugar and flour. Beat at medium speed until well blended and smooth.

4. Add eggs one at a time, mixing well after each addition.

5. Blend in the vanilla essence and sour cream; mixing on low speed.

6. Pour filling over baked crust. Using water-bake.
Bake at 230 degrees C for 10 minutes. Reduce oven temperature to 120 degrees C, and continue baking for 60 minutes.
7. With a knife, loosen cake from rim of pan. Let cool, then remove the rim of pan. Chill before serving. If your cake cracks, a helpful tip is to dampen a spatula and smooth the top, then sprinkle with some chocolate wafer crumbs.

Today is Hui Ning's birthday & once again, I wanted to make her birthday cake a special one. So I let her choose the design! After showing her some simple butter cream design, nothing satisfy her until she saw fondant pressent desing! I dragged making fondant cake as I always have difficulty making a smooth surface on the whole cake! However, since... it's her birthday, I have to oblige & it took me the full 4 hrs just to make a simple fondant design cake! I pre-bake the cake last night, so today will focus on designing the cake.

Cheese Brownie vs Brownie - who will win?

Someone requested for the recipe of the Cheese Brownie which is orignated from here with a little of my modification!

Ingredients

Brownie

160gm unsalted butter

130gm semi-sweet chocolate blocks

3 large eggs

1/4 tsp salt

2/3 cup castor raw sugar

1/2 tsp vanilla extract

2/3 cup all purpose flour

2/3 cup walnuts pecans, chopped (optional)

Cream Cheese Fillings

250gm cream cheese

45gm butter

60gm icing sugar

1 large egg

Method:

1. Preheat oven to 170 degree celcus

2. Grease a 9" square pan (I use silicone square pan - no need to grease)

3. In a double boiler, melt butter and chocolate. Remove from heat to cool for 5 mins.

4. Use and electric mixer, beat eggs and salt until lemon coloured and foamy.

5. Add Sugar and continue beating until mixture is well blend.

6. Stir in vanilla.

7. Add cooled chocolate to mixture and beat till blend.

8. Fold in flour, careful, do not over mix.

9. Gently fold nuts into the batter.

Fillings:

10. Beat cream cheese and butter till smooth.

11. Add icing sugar and continue beating till combine.

12. Add egg.

13. Pour half of the Brownie batter into the prepare pan. Follow by the cream cheese fillings. The pour the balance brownie batter into the pan.

14. Bake for 40mins

15. Remove from oven and leave to cool in baking pan.

My sis would like to learn how to make cup cakes & decorate them with icing, so that she can make this again with her children in their spare time!

Since I have so many mangoes in the fridge, I have decided to make this Mango cupcake using the basic cup cake recipe from http://cookingismypassion.blogspot.com/ by adding mango essence instead of vanilla essence and some cut mango cubes in addition to my usual Chocolate Chips Muffins!

The girls simply had a wonderful time playing with buttercream icing & adding some icing decoration on the chocolate muffins!

See! She is so serious to make them perfect!

Merry Christmas & a Happy New Year to come

It has been a long time since I bake! Partially due to laziness during preggy! However, since dd requested me to make some cookies (later post) I decided to let my oven work a little more with this Green Tea Muffins with Red Beans (1st attempt)

Didn't know that the content is so moist, however, the output is fine as the heat as absorped the moisture during baking. I had placed some Red Beans in the muffin as fillings & I also add the balance Red Beans on top to have a little decoration to the muffins.

Ryan is my nephew and his birthday celebration will have to carry forward to this sunday as some of my sis are going on holiday during his birthday. Hence, the mommy has requested a Racing Car cake for him as he is a big fan of CARS, just like my son!! I think boys are usually fancinated by all types of transportations relating with wheels!!

Japanese Green Tea Cheesecake!

It's a long time since I bake Japanese Cheesecake! Since I have a whole block of cream cheese in my fridge, I must put them into good use.. so, you can expect a lot of cheesy stuff till I finish the cream cheese.

Not bad.. at least this looks 'Green' unlike the Green Tea Muffin I made recently.

For this cake, I have used the same recipe plus 2 teaspoon of green tea powder to the corn flour.

This is simply yummy!

I have a request to make Hello Kitty Birthday Cake 2 wks ago from a 5 yr old girl. This is what I have come out with.

I had a hard time baking the cake as the silicon mold is very deep and I have no idea if I should reduce or increase the temperature, recipe state 175degree and 20 mins for 8" (I have converted to 7")

This result in the imperfect in this cake.

Another Birthday cake for my mom? Yeah.. the previous was made last saturday, and was eaten without her cutting as we wanted to give mom a surprise celebration on today (which is the Actual day)

All goes according to plan as mom was kept in the dark until the caterior set up the food at her place.

How can such celebration goes without a proper cake?

Hence, I have made this cake last night.. without the top design as my highest container can only carry up to this height (abt 7")

Here's the design made in hurry as I was 1 hours late (I travelled from Suntec to Jurong, by bus)! I had asked my hubby to fetch the kids and the cake from home, together with my pre-prepared ingredients and tools.

This is the most successful cake I have made so far!

Here's how I made the cake:

Ingredients:

180gm cake flour
1.2tsp vanilla extract
50gm raw sugar
1.2tsp baking powder
1/8 tsp salt
7 egg yolks
108gm strawberry low fat fresh milk
84gm vegetable oil
7 egg white
50gm raw sugar
1/8 tsp cream of tartar

Fillings:

Whipping cream
Srawberries

Method:

Prepare oven to 1750C, Greas and flour 2 X 9" round pan.
Sift cake flour, baking powder and salt, set aside
beat egg yolks until ribbon stage, add sugar and continue to beat till sugar dissolves.
Add vanilla extract, oil, milk and beat till combine, add flour in 2 portion and beat in medium speed till incorporated.
In a clean bowl, beat egg white, tartar and sugar until soft peaks form.
Fold in egg white into the yolk mixture in 3 portion.
Pour the mixture into the prepared pan and bake for 20mins.
Remove and leave to cool.
Frost with whipped cream.

We like to have them with Hershey's Chocolate Syrup with some margerine.

Ingredients:

plain flour
baking soda
salt
2 eggs

For frying:

Butter

Method:

Beat all ingredients together until smooth
Fry with butter using non stick frying pan

Oatmeal Chocolate Chips Cookies

Got this recipe from a book I borrowed from the library.

Ingredients:
1 cup all-purpose flour
1tsp baking powder
175gm unsalted butter
100gm brown sugar
1 large egg, at room temperature
2tsp vanilla extract
250gm rolled oats (I use quick oatmeal)
75gm semisweet chocolate chip

Method:
1. Preheat the oven to 190degree. Lightly grease two baking sheets.
2. In a large bowl, stir together gthe flour and baking powder.
3. In a large mixing bowl and using a handheldelectric mixer, cream the butter and sugars together until ligh and fluffy. Add the egg and whisk until combined. Stir in the vanilla. With the mixer on low speed or use a wooden spoon, gradually add the flour mixture until combined. Stir in the oats and the chocolate chips.
4. Drop rounded tablespoonfuls o fthe dough, well space apart onto the baking sheets.Leave space between each one for spreading. Flatten each cookie slightly with the back of the spoon. Bake until golden for 12 to 15 mins.

Did I ever mention that I will make 2 car cakes in 2 days?

I was so happy with yesturday's bake, hence, I did not pay extra careful when preparing the bake pan. Therefore, I could not turn out the cake as easy as yesturday's..Luckily only the outter layer was stuck as you could see..

I am so happy to see an almost perfect cake when I sliced it into 2 layers.

Race Car Cake (Lightning Mcqueen Reprica)

It's my boy's birthday and he is a big fan of CARs, Trains, Bus, anything to do with wheels.
Hence, search the internet for designs of Cars, managed to find Lightning Mcqueen, including the piping of the design.

Here I go, head to Phoon Huat on monday, so disappointed that the car pan is sold out, however, managed to reserve one and transferred it to the branch near my vanity.

It was Wednesday, went to get the pan. I was so disappointed again! The race car pan is Not Lightning Mcqueen. But...

Nevertheless, bake this cake this morning with the car pan. I had only filled the pan upto half full, and had the balance bake in the Bunt pan.

I thought, this is too thin for slicing into 2 layer. And somehow feel that the cake will not taste nice.
This is the balance batter that I put them in the bunt pan.
Disarster!.. The cake is not to my expetation!

So, I quickly search my recipe for another easy to make recipe: Tradition Sponge Chocolate Cake. This is perfect except for some flour that is trapped and not fully mixed!

Since the cake is done, I make the buttercream icing while waiting for it to cool down. Here's my tools!

It was difficult to get the correct red for the original Mcqueen and here is mine!

Happy 3rd Birthday to my boy, hope his classmate will like the cake tomorrow when I bring it to his school!

1st Egg Tart!

I had wanted to make Strawberry Pie, but instead it turn out to be egg tarts 'cos I do not have the main ingredients: strawberries! This tarts was made using Aunty Yochana's Recipe.

The recipe says use Food Processor to mix all ingredients, I follow through until I was about to roll the dough, then I notice that it is not rollable to form a smooth dough. So I use a Elect Mixer to mx the dough again and chill it. After 20mins, I roll the dough & hand press it into the Muffin Tray (the only tools I have with similar shape). Then I used a fork to press the rim to remove excess dough. This is my tart dough.

After 20mins of baking, this is what I got!

I did a cross section, thinking that the dough is not fully cooked, however, MIL says it's cooked, hence, I did not put them back into the oven. Taste is YUMMY, trustworthy recipe from Aunty Yochana!

Steam Huat Kuah

I have made this using PH's Huat Kueh ready mix, just need to add water or coconut milk, my choice for Fresh Milk (more healthy). After all the dry and wet ingredients incorporated, I saperate them into 4 small bowls and drip some food colourings to form the colours I wanted! Put in the steamer for 20mins & they are done!

Easy Eggless Lemon Cupcakes

It has been quit a success making Easy Chocolate Muffin using this recipe, hence, for a change, I do away with the Cocoa powder and replace it with Lemon Essence, and this is what I got! These cakes are actually made for my vegetarian colleagues!

Easy Lemon Cupcakes (modification from recipe contributed by Puspha in Nurkochen forum)
Ingredients:

1½ +1/4cups top flour
¾ cup granulated brown sugar
1 tsp baking soda
¼ tsp salt
½ cup butter or margarine, melted
1 cup milk (run out of fresh milk, used 3scoop son's milk powder with 1 cup water)
1 tbsp vinegar
1 tsp lemon essence (can in crease to 1tbsp)
A little cranberries, for topping

Method:

Sift together flour, sugar, soda and salt.
Make a well in the centre. Pour the melted butter, milk, lemon essence (any essence/extract will do) and vinegar into the well.
Stir until all ingredients are moist.
Spoon the batter into muffin cups.
Sprinkle the chocolate chips on top.
Bake in a preheated oven at 180° C for 20 minutes.

Chocolate Cheesecake

It has been a while since I last made this tasty Chocolate Cheesecake! Since, I am on some medication, I had avoided using any liqour this time.

I had always used water-bathe when making this NY cheesecake, hence, for a change, I use normal bake, and this is how the cake has turn out!

I thought it's nice, until few hour later, the cake actually crack!

Hence, I made this to cover the crack, which actually turn out quite tasty with the cake itself.
This is how the chocolate turn out after 10mins in the fridge!
Overall, this cake is tasty, not too sweet, to my liking!

Last of all, I would deligate this Cake to my colleague who has been working till wee hour on Sunday!
